This level of deep authenticity and willingness to accept the denial of a previous self that brings us shame is a rarity. This is your greatest gift. A deep honouring of your own truth. Thank you for everything you are doing. A shining bastion for what is possible. A new era in culinary creativity that’s rooted in compassion and love. And a demonstration of the light that’s available to us when we have the courage to look into our darkness. Respect ❤️

This made me cry. Thank you for being brave enough to start your art form over with integrity. If everyone were as brave we wouldn’t have factory farms or slaughterhouses (I, working for PETA, would also not have a job, but, hey, redundancy would be a dream outcome, if only our work were ever done.) I always say my one true epiphany in life was going vegan. I’m so thankful you shared yours. Here’s to your success, chef.

It's beautiful to witness someone aligning their actions with their values in one of the most fundamental ways possible. Choosing kindness over convenience takes real courage - much love ❤

Thank you for your fearless and eloquent declaration of compassion and humanity. I hope your words encourage others to follow in your footsteps. And a real chef, as an artist, can work their magic with that dirty carrot. Je vous félicite!

How elegant...and powerful. Such introspection, recognition and acceptance. Thank you for sharing your truth with the world. May it inspire others to find their way to perspective and revelation that all sentient beings deserve compassion and love.

I became vegetarian at age 14, and vegan shortly after. And now, 42 years later, the world is finally coming around to what I realized when I looked in my dog’s eyes so long ago….that animals are sentient, that they feel as we do, that they love.

I am so glad you are on this new journey, chef. I wish you well and thank you for speaking out for those who cannot. Animals are the last bastion of innocence on this Earth, we must help them.

A request: if you or anyone else reading my post can tell me where to get a copy of Aymeric Caron’s book in English, I would appreciate it 🙏🏻

I've been vegan 29 years and this really touched my heart. Yes, Chef.

Thank you for sharing your personal journey of revelation. May it be read far and wide to promote common sense and compassion. Many times, we find ourselves caught up in pursuing careers that are by definition cruel, and yet human society encourages and even celebrates them. The easy thing to do is to go along with that norm, but you are different!

although comprehension of animal pain should be wired into human consciousness, it is hard for some with eccentric metabolisms or cruel timetables to eschew animal protein in their diet but the human who kills for others and dresses his carrion for luxurious display is no better than the shameful mercenary who kills for another's fancy.

I am only reading this now, and boy, did it make me cry. Veganism is a spiritual awakening, an alignment with who we are at our core, and what needs to happen before we break down those walls is different for everyone. To act, to break free, and to listen (!) is hard, but it's right. You know it when it happens. You feel it in every part of your body. I am so grateful to you, for what you are doing for the animals and the planet, for sharing this with us, and for the gift you gave yourself: integrity.
